Ingredients
- 200 g Konjac noodles (shirataki)
- 3 Egg
- 50 g Bacon
- 2 tsp Toasted sesame oil
- 100 g Bok choy (optional)
- 1 tsp Light soy sauce (optional)
- ¼ tsp White pepper (optional)
Method
- Cut the bacon across into short lardons, split the pak choi lengthways and beat the eggs with the white pepper.
- Start the bacon in a cold pan and bring it up slowly over six minutes, until the fat has run out and the pieces snap rather than bend. Lift them out and leave the fat.
- Drain and rinse the konjac noodles, then dry-fry them in the bacon fat for four minutes with the pak choi until they squeak and the greens slump.
- Drop the heat as low as it goes, add the sesame oil and pour the eggs over the noodles, dragging them across the pan until they set in soft curds that cling to the strands. Stop while they still look a shade underdone.
- Season with the soy off the heat and scatter the crisp bacon over the top so it stays crisp.
