- 170 g Chicken breast
- 120 g Chickpeas
- 1 Whole wheat tortillas
- 30 g Feta
- 1 Lemon
- 1 tbsp Olive oil
- 60 g Spinach (optional)
- 50 g Tomato (optional)
- 10 g Parsley (optional)
- 1 tsp Ground cumin (optional)
- ½ tsp Dried oregano (optional)
Method
- Cube the chicken breast to about the size of the chickpeas so the two cook at the same rate, then toss it with the ground cumin and the dried oregano until it is evenly dusted.
- Rinse the chickpeas in a sieve until the water running underneath is clear, then chop the tomato, roughly cut the parsley and crumble the feta into rubble.
- Get the olive oil properly hot and brown the chicken in an uncrowded pan for six minutes, moving each piece only once its underside has taken colour.
- Tip the rinsed chickpeas in around the chicken and let them blister against the bare metal for two minutes, shaking the pan so they take colour on more than one side.
- Fold the spinach in a handful at a time and give it two minutes to collapse into the steam the chickpeas are throwing off — it should go limp and dark without leaking water into the pan.
- Heat a second dry pan and turn it straight off again, then leave the wholewheat tortilla on the cooling metal for three minutes — enough heat to make it fold, not enough to dry it out.
- Squeeze half the lemon over the pan and stir once, then spoon the mixture down the centre of the tortilla, scatter the tomato, parsley and feta across it and fold the two short sides in before rolling.
- Sit it seam-down for a moment so it seals itself, then cut it in two and squeeze the last of the lemon over the open ends.
