Ingredients

  • 200 g Konjac rice
  • 200 g Chicken thighs
  • 2 tbsp Olive oil
  • 2 tsp Dried oregano
  • ½ Lemon
  • 40 g Zucchini (optional)
  • 30 g Feta (optional)
  • 8 g Parsley (optional)

Method

  1. Pat the chicken thighs dry and rub them with the oregano, salt and lemon zest. Cut the courgette into thick half-moons and chop the parsley.
  2. Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
  3. Heat the olive oil in a heavy pan over medium-high and lay the thighs in skin-side down. Leave them 7 minutes without moving, until the skin is deep gold and crisp.
  4. Turn the thighs, tuck the courgette into the fat around them, and cook 5 minutes more until the chicken is cooked through and the courgette has coloured.
  5. Off the heat, squeeze the lemon over the pan and swirl it through the oregano oil in the bottom.
  6. Spread the konjac rice on a plate, set the thighs and courgette over it and pour on every drop of the lemon-oregano oil. Crumble over the feta and scatter the parsley.
