  • 45 g All-purpose flour
  • 180 g Chicken breast
  • Onion
  • 10 g Ginger
  • 1 clove Garlic
  • 5 g Cilantro
  • ½ tsp Neutral oil
  • ¼ tsp Salt
  • ⅛ tsp Ground cumin (optional)
  • ⅛ tsp Ground turmeric (optional)

Method

  1. Bring the flour together with cold water into a firm dough, knead it until it is smooth, then cover it and let it sit. The rest is what lets you roll a momo wrapper thin at the edge and thick at the centre without it snapping back.
  2. While the dough rests, chop the onion very fine, grate the ginger and garlic and chop the coriander, stalks and all.
  3. Mince the chicken breast by hand and mix it with the onion, ginger, garlic, coriander, cumin, turmeric, oil and salt until it is uniform and slightly slack.
  4. Roll the dough into discs thin at the rim, hollow each one in your palm around a heaped spoon of filling and walk the pleats round to a closed purse.
  5. Oil the steamer tray, sit the momo apart from one another and steam them covered until the wrappers are glossy and no pink juice runs when one is pierced.
  6. Lift them out with a spoon so the bases do not tear, and serve them straight from the tray.
