Ingredients

  • 1 Whole wheat tortillas
  • 260 g Beef sirloin
  • 50 g Brown rice
  • 1 tsp Ground cumin
  • 1 tsp Sumac
  • 2 tsp Olive oil
  • ½ Lemon
  • ¼ tsp Salt
  • 70 g Tomato (optional)
  • 50 g Cucumber (optional)
  • 10 g Parsley (optional)

Method

  1. Set the brown rice going first — rinsed, covered by a good two centimetres of water, lidded, and left alone on a low flame for twenty-eight minutes.
  2. While the rice softens, slice the sirloin as thinly as you can across the grain and rub the strips with the cumin, the sumac, the salt and half the lemon.
  3. Leave the beef in the rub for fifteen minutes. Cut this thin it takes the salt and acid quickly, and the cumin needs that long to stop tasting raw.
  4. Chop the tomato and cucumber into small dice, fold the parsley through them and sharpen the lot with the rest of the lemon.
  5. Get a heavy pan genuinely hot with the olive oil, spread the beef out in one layer and leave it two minutes without touching it, then keep it moving for four minutes more until the edges are dark and the cumin smells toasted.
  6. While the beef is in the pan, soften the wholewheat tortilla in a second dry pan for about a minute a side — a burrito this full needs a wrapper that will stretch rather than tear.
  7. Lay the rice in a broad stripe across the lower third of the tortilla, pile the beef onto it, spoon the tomato salad over, then fold the sides in and roll upwards, pressing the filling back with your fingers as you go.
  8. Cut it in two and serve at once with the cut faces upward, so the rice and beef show.
