About Lamb Kofta
Lamb kofta are spiced minced-meat skewers found throughout the Middle East and the eastern Mediterranean, where grilled ground lamb is a staple of both home kitchens and street grills. Grated onion and chopped parsley are worked into the lamb along with cumin, allspice, and a whisper of cinnamon, then the mixture is shaped firmly around skewers and charred over high heat. The seasoning is warm and aromatic rather than fiery — allspice and cinnamon give a fragrant, almost sweet backbone that pairs naturally with the richness of lamb, while the grated onion keeps the interior moist.
The trick to good kofta is in the mixing and shaping: the meat needs to be combined until slightly tacky and pressed firmly onto the skewers so it holds together over the fire rather than sliding off. Grilling over high heat gives a charred, savory crust while the inside stays juicy. Low in carbs and friendly to keto eaters, kofta are traditionally served with cooling yogurt and warm flatbread, often alongside a chopped salad or grilled vegetables. They cook in about half an hour, which makes them a strong choice for a grill night or a fast, protein-heavy dinner.
