Ingredients
- 800 g Lamb shoulder
- 400 g Basmati rice
- 2 Onion
- 1 tsp Allspice
- 1 Cinnamon stick
- 4 tbsp Extra-virgin olive oil
- 1 tbsp Salt
- 50 g Pine nuts (optional)
Method
- Cube the lamb and slice the onions.
- Brown the lamb in oil, then soften the onion and add the spices.
- Add water and braise the lamb until tender, about 30 minutes.
- While the lamb braises: rinse the basmati rice until the water runs clear, then drain.
- Stir in the rice with the measured liquid, cover, and steam until fluffy, about 15 minutes.
- Rest the pot off the heat, covered, for 5 minutes so the rice finishes steaming.
- Toast the pine nuts and scatter over the platter to serve.
