Thai minced chicken salad

Ingredients
- 400 g Chicken thighs
- 30 g Glutinous rice
- 3 Shallot
- 1 bunch Mint
- 4 tbsp Cilantro
- 3 Thai chilies
- 2 tbsp Fish sauce
- 2 Lime
Method
- Toast the glutinous rice in a dry pan over medium heat, shaking often, until evenly golden and nutty, then grind to a coarse powder in a mortar.
- Slice the shallots and pick the mint and cilantro leaves.
- Cook the chicken in a pan over medium heat with a splash of water and no oil, breaking it into small crumbles, until just cooked through.
- Take the pan off the heat and dress the chicken with the fish sauce, lime juice, Thai chilies, sliced shallots, and the toasted rice powder.
- Fold in the mint and cilantro and serve warm.
