Umbrian Lentils with Sausage & Greens
Earthy lentils braised with a little sausage, tomato, and chard. Deeply savory and full of fiber.

Ingredients
- 300 g Puy lentils
- 150 g Italian sausage
- 200 g Canned tomatoes
- 150 g Swiss chard
- 1 Onion
- 1 Carrot
- 3 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
Method
- Dice the onion and carrot, mince the garlic, and shred the chard.
- Brown the crumbled sausage in the oil, then add the onion, carrot, and garlic and soften.
- Add the lentils, tomatoes, salt, and water to cover, and simmer until the lentils are tender, 22 minutes.
- Stir in the chard and cook until wilted, 4 minutes.
- Drizzle with oil and serve.
