  • 300 g Glutinous rice
  • 1 tin Coconut milk
  • 80 g Palm sugar
  • 2 Mango
  • ½ tsp Salt
  • 1 tbsp Sesame seeds (optional)

Method

  1. Rinse the glutinous rice, then soak it in plenty of cold water for at least 30 minutes and drain.
  2. Steam the drained glutinous rice over simmering water until tender and translucent.
  3. While the rice steams, warm the coconut milk in a small pan over low heat with the palm sugar and salt, stirring until dissolved.
  4. Fold most of the coconut sauce into the hot rice and leave it to absorb, covered.
  5. Peel and slice the mango cheeks, then serve with the mango, the rest of the coconut sauce, and a sprinkle of sesame seeds.
