About Egg Bhurji

Egg bhurji is India's answer to scrambled eggs, and the name essentially means the eggs are broken up and cooked into a spiced, crumbly mixture. Rather than folding eggs around a filling, the technique builds a masala first — onion softened, then garlic, ginger, turmeric and a pinch of garam masala bloomed in the fat, tomato cooked to a pulp — before the beaten eggs go in to scramble through it. That order means every curd carries the flavor of the aromatics, giving the dish a warmth and savoriness that plain scrambled eggs never reach.

The eggs are cooked low and slow and pulled while still glossy, so the texture stays soft and just-set rather than dry. It's a fast, satisfying breakfast that also happens to be low-carb and keto-friendly, cooked with a mix of oil and butter for richness. Bhurji is almost universally eaten with hot toast, pav, or roti to scoop it up, and it's just as at home as a quick dinner or a filling for a wrap. This version's edge is its balance of ginger and garam masala — enough to be distinctly spiced without overwhelming the eggs themselves.
