  • 400 g Canned tomatoes
  • 4 Egg
  • 1 Onion
  • 3 cloves Garlic
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • ½ tsp Red pepper flakes (optional)
  • 60 g Feta (optional)
  • 2 tbsp Parsley (optional)

Method

  1. Finely dice the onion; thinly slice the garlic.
  2. Heat olive oil in a wide pan over medium. Sweat the onion until soft, 6 minutes. Add garlic and stir 30 seconds.
  3. Add cumin, paprika, and chili flakes and toast for 30 seconds.
  4. Pour in the tomatoes, season with salt and pepper, and simmer until thickened, about 8 minutes.
  5. Make four wells in the sauce and crack an egg into each. Cover and cook on low until the whites are set and yolks still soft, 5 minutes.
  6. Crumble feta over the top and scatter parsley.
