Ingredients

  • 100 g Wheat noodles
  • 60 g Pork belly
  • 220 g Long beans
  • 250 ml Chicken stock
  • 1 tbsp Light soy sauce
  • 1 tsp Dark soy sauce
  • 6 g Dried shiitake (optional)
  • 3 cloves Garlic (optional)
  • 1 Scallions (optional)
  • 1 tsp Neutral oil (optional)

Method

  1. Cover the dried shiitake with warm water and leave them to swell.
  2. Slice the pork belly into thin strips, snap the long beans into finger lengths, chop the garlic and cut the scallion into short batons.
  3. Fry the pork strips in the oil in a wide lidded pan until the fat has run out of them and the lean edges have caught brown.
  4. Add the garlic and the soaked shiitake, sliced, then the long beans, and keep turning them in the fat until the beans are blistered and army green.
  5. Pour in the stock with both soys, lay the dry noodles across the surface in an even raft without stirring them in, and clamp on the lid.
  6. Leave it over a low flame until the hiss turns dry and there is no liquid left under the noodles, which will have swollen and taken the colour of the soy.
  7. Lift the lid, fold the noodles down through the pork and beans with chopsticks, and scatter the scallion over as it goes to the table.
