- 250 g Kidney beans
- 400 g Canned tomatoes
- 2 Carrot
- 2 Celery
- 1 Zucchini
- 100 g Kale
- 1 Onion
- 3 cloves Garlic
- 3 tbsp Extra-virgin olive oil
- 0.6 tsp Salt
- 80 g Ditalini (optional)
Method
- Dice the onion, carrot, celery, and zucchini; mince the garlic and strip the kale.
- Soften the onion, carrot, celery, and garlic in the oil until sweet, 8 minutes.
- Add the tomatoes, beans, zucchini, salt, and water to cover, and simmer 15 minutes.
- Stir in the pasta and kale and cook until the pasta is done and the kale tender, 9 minutes.
- Drizzle with oil and serve.
