Ingredients

  • 250 g Kidney beans
  • 400 g Canned tomatoes
  • 2 Carrot
  • 2 Celery
  • 1 Zucchini
  • 100 g Kale
  • 1 Onion
  • 3 cloves Garlic
  • 3 tbsp Extra-virgin olive oil
  • 0.6 tsp Salt
  • 80 g Ditalini (optional)

Method

  1. Dice the onion, carrot, celery, and zucchini; mince the garlic and strip the kale.
  2. Soften the onion, carrot, celery, and garlic in the oil until sweet, 8 minutes.
  3. Add the tomatoes, beans, zucchini, salt, and water to cover, and simmer 15 minutes.
  4. Stir in the pasta and kale and cook until the pasta is done and the kale tender, 9 minutes.
  5. Drizzle with oil and serve.
