About Curried Mussels
Moules au curry — curried mussels — is a dish from the mussel-loving kitchens of France and Belgium, a variation on the classic moules marinière that swaps the plain white-wine broth for one perfumed with warm curry spice. The mussels are steamed open in a fragrant liquid built from shallot and garlic softened in butter, bloomed garam masala, white wine for acidity, and coconut milk for a silky, gently sweet richness. It's a quick dish, done in about twenty-five minutes, because mussels cook in the few minutes it takes them to open.
The result is briny, sweet, and aromatic all at once: plump mussels giving up their sea-salt liquor into a creamy coconut-curry broth that's more perfumed than fiery. Fresh cilantro scattered at the end lifts it with a green, citrusy note. This is a dish that lives or dies on its broth, which is why it's always served with crusty bread — the point is as much to mop up the spiced coconut cream as to eat the mussels themselves. Discard any mussels that don't open during steaming, and bring it to the table the moment they do.
