Ingredients

  • 45 g All-purpose flour
  • 120 g Shrimp
  • 40 g Firm tofu
  • 40 g Napa cabbage
  • 1 Egg white
  • 1 clove Garlic
  • 1 tsp Light soy sauce
  • 1 tsp Rice vinegar
  • 10 g Scallions (optional)
  • ½ tsp Toasted sesame oil (optional)
  • ½ tsp Sesame seeds (optional)

Method

  1. Knead the flour with cold water into a firm dough and leave it covered to relax — mul mandu are boiled naked, so the wrapper has to be strong enough to take the water on its own.
  2. While the dough relaxes, shred the napa and salt it lightly, then squeeze it out. Press the tofu dry in a towel, slice the scallions and grate the garlic.
  3. Chop the prawns and mix them with the tofu, napa, scallion and garlic, then beat in the egg white until the filling turns glossy and stiff enough to hold a peak.
  4. Roll the dough thin, cut wide rounds, fill them and seal into half-moons, then bring the two points together and pinch so each mandu sits like a ring.
  5. Stir the soy, rice vinegar, sesame oil and sesame seeds together in a small dish for dipping.
  6. Bring a wide pan of water to a rolling boil.
  7. Lower the mandu in a few at a time, keeping the water at a lazy roll, until they float and the wrappers turn slippery and translucent.
  8. Scoop them out and let them drain for a moment over the pan so they do not carry water onto the plate.
  9. Pile them into a shallow bowl with the dipping sauce beside them.
