Ingredients

  • 200 g Ground chicken
  • 1 Low-carb tortillas
  • 25 g Greek yogurt
  • 1 tbsp Ghee
  • 10 g Ginger
  • ½ tsp Garam masala
  • ¼ tsp Salt
  • 1 Green chili (optional)
  • ½ tsp Kasuri methi (dried fenugreek leaves) (optional)
  • 6 g Mint (optional)
  • 8 g Cilantro (optional)

Method

  1. Chop the mint, the coriander, the green chilli and the ginger together on one board until the whole lot is a damp green rubble fine enough to vanish into mince.
  2. Put the chicken mince in a bowl with the green rubble, the Greek yoghurt, the garam masala, the salt and the kasuri methi crumbled between your palms, and knead it for four minutes. A seekh holds together because the mince has been worked, not because anything was added to bind it — stop when a thumb pressed into the surface leaves a print that stays.
  3. Cover the bowl and put it in the fridge for twelve minutes, which is what stops the fingers sagging off the pan later.
  4. With a wet hand, press the cold mince into four flat fingers about the length of your palm and a thumb across.
  5. Melt the ghee in a heavy pan over a high flame and lay the fingers down with a gap between each. Give them four minutes on the first face and four on the second, moving them only to turn them, until the crust has gone dark brown all along the ridges.
  6. While the seekhs take their colour, bring the low-carb tortilla up over a second flame for two minutes, a minute a face, so it bends at the fold instead of cracking there.
  7. Lay the fingers end to end just off the centre of the warm tortilla, spoon the browned ghee left in the pan over them, and roll the tortilla round tight with one end folded under.
  8. Cut it on a long diagonal and eat it from the point, before the ghee finds its way out of the bottom.
