Ingredients

  • 200 g Konjac rice
  • 200 g Chicken thighs
  • 40 g Yogurt
  • 1 tbsp Ghee
  • 1 tsp Garam masala
  • ½ tsp Red chili powder (optional)
  • 10 g Ginger (optional)
  • 10 g Cilantro (optional)
  • ¼ Lemon (optional)

Method

  1. Cut the chicken thighs into large pieces. Grate the ginger and mix it into the yoghurt with the garam masala, chilli powder and salt, then turn the chicken through it and leave it while the pan heats.
  2. Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
  3. Melt the ghee in a heavy pan over high and lay the chicken in without crowding it. Leave it 5 minutes so the yoghurt marinade dries and blackens against the pan, then turn and cook 4 minutes more until cooked through.
  4. Spread the konjac rice on a plate and pile the charred chicken over it with the spiced ghee from the pan. Scatter the coriander and squeeze the lemon over.
