- 8 Chicken thighs
- 3 Onion
- 3 tbsp Sumac
- 4 Pita
- 1 tsp Allspice
- 6 tbsp Extra-virgin olive oil
- 1 tsp Salt
- 50 g Pine nuts (optional)
Method
- Heat the oven to 200C (400F) and season the chicken thighs all over with the sumac, allspice, and salt.
- Roast the chicken until golden and cooked through, about 30 minutes.
- While the chicken roasts, slowly caramelise the sliced onions in the olive oil in a skillet over medium-low heat with a little more sumac until soft and deep gold.
- Toast the pine nuts in a dry pan over medium heat until golden, shaking often, about 3 minutes.
- Pile the onions on the warm pita, top with the chicken and toasted pine nuts, and serve.
