About Mushroom Omelette

The mushroom omelette is a cornerstone of French home cooking and a small test of technique dressed up as breakfast: a soft, barely-set omelette folded around buttery sautéed mushrooms. The French style aimed for here is pale and tender rather than browned and firm, the eggs cooked gently over medium heat and pulled from the pan while the centre is still creamy. The mushrooms are sautéed separately in butter until golden first, so they bring concentrated, savoury depth without weeping water into the eggs. Chives finish it with a light oniony freshness that lifts the richness.

Eaten the moment it slides onto the plate, the omelette is silky and just-set on the outside with a soft, custardy interior, the earthy mushrooms and butter carrying most of the flavour and the chives cutting through. It's a single-serving dish and a genuinely fast one at around twelve minutes, which makes it as suited to a quick lunch or light supper as to breakfast. High in protein and naturally low in carbohydrate, it fits keto and low-carb eating without any special substitution. The reward for a little care with the heat is a far more tender egg than the browned, folded omelette most cooks default to.
