  • 250 g Mushroom
  • 2 Flour tortillas
  • 100 g Melting cheese
  • 2 cloves Garlic
  • 1½ tbsp Neutral oil
  • ½ tsp Salt
  • ½ tsp Ground cumin (optional)
  • 1 Scallions (optional)
  • 1 tbsp Hot sauce (optional)

Method

  1. Slice the mushrooms thin.
  2. Mince the garlic.
  3. Slice the scallion thinly. (optional)
  4. Brown the mushrooms hard in the oil in a skillet over high heat without crowding until deeply golden, about 5 minutes.
  5. Add the garlic, cumin, and salt and cook until fragrant, about 30 seconds, then tip onto a plate.
  6. Lay a tortilla in the dry pan and scatter half the cheese over it.
  7. Spread the mushrooms over the cheese, scatter the scallion, then top with the rest of the cheese and the second tortilla.
  8. Cook over medium until the underside is golden, about 3 minutes, then flip with a wide spatula and crisp the other side, about 2 minutes.
  9. Rest one minute, cut into wedges, and serve with hot sauce.
