- 600 g Lamb
- 3 Carrot
- 2 Turnip
- 1 Onion
- 1 tsp Thyme
- 2 tbsp Olive oil
- ½ tsp Salt
- 150 g Frozen peas (optional)
- 1 tbsp Tomato paste (optional)
Method
- Brown the cubed lamb in the olive oil in batches, then set aside.
- Soften the diced onion in the pan, stir in the tomato paste, then return the lamb with the thyme, salt, and water.
- Braise gently, covered, for 60 minutes.
- Add the carrot and turnip chunks and cook until tender, 20 minutes, adding the peas for the last 5.
- Serve in shallow bowls.
