Ingredients

  • 67 g Wheat noodles
  • 150 g Shrimp
  • 6 g Dried shiitake
  • 2 tsp Japanese light soy sauce (usukuchi)
  • 3 g Kombu (dried kelp) (optional)
  • 4 g Katsuobushi (bonito flakes) (optional)
  • ½ Carrot (optional)
  • 60 g Spinach (optional)
  • 6 g Ginger (optional)

Method

  1. Cover the dried shiitake and the kombu with cold water and leave them until the caps are pliable all the way through and the water has turned brown.
  2. Shell the prawns, cut the carrot into thin coins, grate the ginger, and wash the spinach.
  3. Lift out the kombu, slice the softened shiitake and return them to their soaking liquor, bring it to a shiver and drop in the bonito flakes off the heat, then strain once they have sunk.
  4. Season the dashi with the usukuchi soy, add the carrot coins and simmer until they bend without breaking.
  5. Drop the prawns and spinach into the broth and take the pan off the heat the moment the prawns tighten into commas and the spinach collapses.
  6. Cook the somen in a separate pan of unsalted water until it is just yielding, then drain and rinse it so it stops cooking.
  7. Coil the drained somen into a hot bowl, ladle the broth with its prawns and vegetables over the top, and finish with the grated ginger.
