About Oatmeal Raisin Cookies

Oatmeal Raisin Cookies are a classic of the American home-baking repertoire, the slightly wholesome cousin to the chocolate chip cookie and, for their fans, unfairly overlooked. They are built on creamed butter and brown sugar, whose molasses content gives them a butterscotch note, then bulked up with oats and flour and studded generously with raisins. Ground cinnamon warms the dough, and baking soda gives just enough lift to keep them from turning dense.

Baked right, they are chewy in the center with crisp, caramelized edges, the oats adding a hearty, slightly nubbly texture and the plumped raisins offering little bursts of sweetness throughout. Cinnamon ties it all together into something cozy and unfussy. They are a good keeping cookie for a jar on the counter or a lunchbox, and pair naturally with coffee or a glass of cold milk. The technique that makes this version work is pulling the cookies while the edges have set but the centers still look underdone, then letting them finish setting on the hot tray, which locks in that chewy middle rather than baking it out.
