About Bhindi Fry

Bhindi fry is one of the everyday backbones of North Indian home cooking: okra sliced into rounds and dry-fried with onion and warm spices until it turns crisp and nutty rather than soft. The whole point — and the challenge — of the dish is beating okra's notorious sliminess, which this recipe handles by washing and thoroughly drying the pods before slicing, then frying them over medium-high heat until they lose their stickiness and crisp at the edges. Turmeric, red chili powder, and ground coriander season the vegetable, while amchur, dried mango powder, brings a bright sour note that keeps it from tasting flat.

On the plate it's dry and savory, with just enough oil to carry the spices, a gentle heat, and that signature tang cutting through the sweetness of the browned onion. This is a side rather than a centerpiece — traditionally eaten with hot roti or as part of a larger thali alongside dal and rice. It's vegan, quick, and low in carbs, which makes it a useful everyday vegetable dish. Serve it fresh from the pan while the okra still has its crunch, since it softens as it sits.
