Ingredients

  • 300 g Chicken thighs
  • 1 bunch Holy basil
  • 4 cloves Garlic
  • 4 Thai chilies
  • 2 tbsp Fish sauce
  • 1 tbsp Oyster sauce
  • 1 tsp Dark soy sauce
  • 400 g Jasmine rice
  • 2 tbsp Neutral oil
  • 1 tsp Sugar

Method

  1. Rinse the jasmine rice and cook it in twice its volume of water, covered, until tender and the water is absorbed, about 15 minutes.
  2. While the rice cooks, mince the chicken roughly and pound the garlic and chilies to a coarse paste.
  3. Stir-fry the garlic and chili in hot oil for a few seconds until fragrant, then add the chicken and stir-fry over high heat until cooked through and lightly browned.
  4. Season with the fish sauce, oyster sauce, dark soy, and sugar and toss to coat.
  5. Fold in the holy basil off the heat so it just wilts.
  6. Serve over the jasmine rice, ideally with a crispy fried egg.
