- 550 g Long beans
- 2 tbsp Red curry paste
- 2 tbsp Neutral oil
- 250 g Firm tofu (optional)
- 4 Kaffir lime leaves (optional)
- 1 tbsp Light soy sauce (optional)
- 1 tsp Sugar (optional)
Method
- Cut the long beans into finger-lengths and cube the tofu.
- Fry the curry paste in the oil until fragrant, then add the tofu to coat, 3 minutes.
- Add the beans and lime leaves and stir-fry over high heat until the beans are blistered and dry, 6 minutes.
- Season with light soy and sugar and serve.
