Ingredients

  • 550 g Long beans
  • 2 tbsp Red curry paste
  • 2 tbsp Neutral oil
  • 250 g Firm tofu (optional)
  • 4 Kaffir lime leaves (optional)
  • 1 tbsp Light soy sauce (optional)
  • 1 tsp Sugar (optional)

Method

  1. Cut the long beans into finger-lengths and cube the tofu.
  2. Fry the curry paste in the oil until fragrant, then add the tofu to coat, 3 minutes.
  3. Add the beans and lime leaves and stir-fry over high heat until the beans are blistered and dry, 6 minutes.
  4. Season with light soy and sugar and serve.
