Ingredients
- 200 g Rice stick noodles
- 200 g Shrimp
- 100 g Firm tofu
- 2 Egg
- 150 g Bean sprouts
- 3 Scallions
- 50 g Peanuts
- 3 tbsp Tamarind paste
- 2 tbsp Fish sauce
- 2 tbsp Sugar
- 3 tbsp Neutral oil
- 1 Lime (optional)
Method
- Soak the rice stick noodles in warm water until pliable but not soft, then drain.
- While the noodles soak, cube the tofu, slice the scallions, and crush the peanuts.
- Whisk the tamarind, fish sauce, and sugar together, tasting until it balances sour, salty, and sweet.
- Fry the tofu and shrimp in hot oil over high heat until the shrimp turns pink, push everything to one side, and scramble the egg in the cleared space.
- Add the drained noodles and the sauce and toss over high heat until the noodles soften and glaze.
- Fold in the bean sprouts and scallions off the heat.
- Plate with the crushed peanuts and a lime wedge.
