Ingredients

  • 400 g Bomba rice
  • 500 g Rabbit
  • 500 g Whole chicken
  • 250 g Flat green beans
  • 200 g Butter beans (garrofo)
  • ½ tin San Marzano tomatoes (DOP)
  • 4 cloves Garlic
  • 1 tsp Pimenton dulce (sweet smoked paprika)
  • ¼ g Saffron
  • 1 bunch Rosemary
  • 100 ml Extra-virgin olive oil
  • 1300 ml Chicken stock
  • 20 g Salt

Method

  1. Warm the stock in a saucepan and bloom the saffron in a ladleful of it.
  2. Joint the rabbit and chicken into pieces. Season with salt.
  3. Top and tail the flat green beans. Crush or finely blend the tinned tomatoes (or grate fresh tomatoes through a box grater, discarding skins).
  4. Smash the garlic. Pull the rosemary leaves from the stems.
  5. Heat the olive oil in the paellera over medium-high. Sear the meats until deeply golden all over.
  6. Push the meats to the rim. Add the green beans and garlic in the centre and fry until they take on colour.
  7. Push everything aside. Add the grated tomato and butter beans and cook until the tomato darkens and thickens.
  8. Pull the pan off the heat. Stir in the pimentón for about 10 seconds so it blooms but does not burn.
  9. Return to high heat. Pour in the saffron stock and bring to a rolling boil. Taste — the broth should be assertively salty.
  10. Scatter the bomba rice evenly across the pan. Tuck the rosemary sprigs in. Do not stir from here on.
  11. Boil hard, then drop to medium-low and let the rice cook undisturbed until the liquid is absorbed.
  12. Crank the heat to high to develop the socarrat (the prized crisp, caramelised crust of rice on the bottom of the pan) — listen for a crackle.
  13. Off heat, cover the pan with a clean cloth and rest (reposo).
  14. Bring the paellera to the table. Serve from the pan with wooden spoons.

About Paella Valenciana

Paella valenciana is the original and, to Valencians, the only true paella, a dish with protected regional pride behind it and a fixed cast of ingredients: rabbit, chicken, flat green beans, and large white garrofo butter beans over saffron bomba rice. It grew out of the rice paddies and farmland around Valencia's Albufera lagoon, where field workers cooked whatever meat and vegetables were at hand over an open fire in a wide flat pan, and it deliberately excludes the seafood most outsiders associate with the word. The taste is earthy and savory rather than briny, with the deep browned flavor of seared meat, the sweetness of tomato and beans, and rosemary and smoked pimenton threading through it. This is a Sunday-lunch dish, cooked large and eaten slowly among family.

Making it well is about building layers in the pan before the rice ever goes in: the rabbit and chicken are seared until deeply golden, the beans and garlic fried until they take color, and the grated tomato cooked down into a sofrito, so every grain of rice later cooks in a stock already loaded with flavor. Saffron bloomed in warm stock does double duty, tinting the rice gold and lending its distinctive fragrance. As with any paella the rice is spread flat and left unstirred so the bottom can form a socarrat, the toasted crust that is the mark of the dish done right. Portioned for six and finished with a sprig of rosemary, it wants nothing more than lemon and good company.
