About Pan Bagnat
Pan bagnat is the sandwich form of salade nicoise, a specialty of Nice on the French Riviera whose Provencal name means bathed bread, a nod to the olive oil and tomato juices that soak into the crumb. It packs the components of the famous salad, tomato, hard-boiled egg, anchovy, olives, and onion, into a split loaf rubbed with oil, turning a composed salad into portable lunch. The flavor is bold and briny, driven by the salt of anchovy and Kalamata olives against sweet ripe tomato and the richness of egg, all softened and unified by good olive oil. It is beach and picnic food in its home region, made to be eaten out of hand.
The trick that makes it more than a stuffed baguette is pressing: the assembled sandwich is weighted for a few minutes so the bread compacts and drinks up the juices, which is where the name comes from and why it tastes better than the sum of its parts. That short rest lets the tomato and oil meld into the crumb instead of running out the sides on the first bite. It needs no cooking beyond boiling the eggs, so it comes together in about twenty minutes and travels well, tasting even better after it has sat a while. Cut it into halves and serve at room temperature, ideally somewhere outdoors with something cold to drink.
