- 150 g Konjac rice
- 110 g Paneer
- 20 g Yogurt
- 1½ tbsp Ghee
- ½ tsp Garam masala
- 20 g Bell pepper (optional)
- 5 g Ginger (optional)
- 10 g Cilantro (optional)
- ¼ Lemon (optional)
Method
- Cut the paneer into thick cubes and the pepper into squares. Grate the ginger and stir it into the yoghurt with the garam masala and salt, then turn the paneer through it and leave it to sit.
- Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
- Melt the ghee in a heavy pan over high heat and lay in the marinated paneer and pepper in a single layer. Leave them 3 minutes without touching, so the yoghurt coating blackens in patches, then turn and give them 2 minutes more.
- Spread the konjac rice on a plate and tip the charred paneer and pepper over it with all the spiced ghee from the pan. Scatter the coriander and squeeze over the lemon.
