About Taleggio and Walnut Pasta
This taleggio and walnut pasta is a northern Italian idea built around Taleggio, the soft, washed-rind cow's-milk cheese from Lombardy known for its pungent aroma and remarkably mild, buttery, almost fruity flavor once melted. Paired with cream, it forms a luxurious sauce, and toasted walnuts bring the crunch and earthiness that make the dish sing. It draws on the classic alpine affinity between rich cheese, nuts, and fruit, the sort of pairing that turns up on a cheese board and translates naturally to a plate of pasta. Fettuccine, with its broad ribbons, is ideal for carrying a creamy sauce like this one.
The eating is indulgent and mellow: the taleggio melts into something silky and rounded, tangy at the edges but never sharp, with the walnuts adding a toasty bitterness and textural contrast against the smooth sauce. Toasting the nuts in a dry pan first is a small step that pays off, deepening their flavor and driving off any raw rawness before they're folded in. A good grind of black pepper cuts the richness and keeps each forkful from turning one-note. It's a quick, cozy vegetarian plate, ready in about twenty minutes, best eaten hot before the cheese firms up.
