- 320 g Adzuki beans (red bean / anko)
- 60 g White rice
- ¼ tsp Salt (optional)
- 1 tbsp Honey (optional)
Method
- Simmer the adzuki beans in plenty of water until completely soft, about 40 minutes, adding water as needed.
- Rinse the rice.
- Lightly mash the beans, add the rice and more water, and simmer, stirring often, until the rice is soft and the porridge thick, 15 minutes.
- Sweeten lightly if you like and serve hot.
