Ingredients
- 200 g Noodles
- 3 tbsp Peanut butter
- 2 tbsp Soy sauce
- 1 Lime
- 1 tbsp Honey
- 1 clove Garlic (optional)
- ½ tsp Red pepper flakes (optional)
- ½ Cucumber (optional)
- 2 tbsp Peanuts (optional)
Method
- Bring a large pot of salted water to a rolling boil over high heat.
- Cook the noodles in the boiling water until just tender, stirring once so they don't clump.
- Grate the garlic and squeeze the lime juice into a large mixing bowl.
- Whisk the peanut butter, soy sauce, honey, and chile flakes into the bowl with the garlic and lime juice until smooth.

- Drain the noodles, reserving a mug of the starchy cooking water first.
- Whisk a splash of the hot noodle water into the sauce until it is pourable.
- Toss the drained noodles through the sauce, loosening with more noodle water as it tightens.
- Pile the noodles into bowls and top with the cucumber matchsticks and crushed peanuts, if using.
