- 600 g White fish fillet
- 5 Tomato
- 1 Onion
- 3 cloves Garlic
- 1 Jalapeno
- 2 tbsp Extra-virgin olive oil
- 1 Lime
- ½ tsp Salt
- 3 tbsp Parsley (optional)
- 1 tbsp Capers (optional)
Method
- Dice the onion, mince the garlic, seed and slice the jalapeño, and chop the tomatoes.
- Soften the onion, garlic, and jalapeño in the oil until translucent.
- Add the tomatoes and salt and simmer until saucy, about 8 minutes.
- Nestle the fish into the sauce, spoon it over, cover, and braise gently until the fish flakes, 8 minutes.
- Squeeze the lime over, scatter the parsley and capers, and serve.
