  • 600 g White fish fillet
  • 250 g Cherry tomatoes
  • 3 cloves Garlic
  • 4 tbsp Parsley
  • 3 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 100 ml White wine (optional)
  • ½ tsp Red pepper flakes (optional)

Method

  1. Warm the oil with the sliced garlic and pepper flakes until fragrant.
  2. Add the halved tomatoes and salt and cook until they slump, 5 minutes.
  3. Pour in the wine and a splash of water and bring to a simmer.
  4. Slide in the fish, cover, and poach gently until it flakes, 8 minutes.
  5. Scatter with parsley and serve in shallow bowls with the broth.
