- 1 Low-carb tortillas
- 170 g Beef sirloin
- 1½ tbsp Olive oil
- 40 g Monterey Jack (optional)
- 80 g Bell pepper (optional)
- ½ tsp Black pepper (optional)
Method
- Slice the sirloin against the grain as thinly as you can keep the knife steady for — the thinner it goes, the less time it needs in the pan. Cut the pepper into narrow strips and grind the black pepper over the meat.
- Heat two thirds of the olive oil in a wide pan until it ripples, then fry the pepper strips hard for four minutes until they slump and blacken at the edges.
- Throw the beef in and keep it moving with two spatulas, chopping through it as you go, for barely two minutes: it is done the moment the last of the red disappears.
- Kill the heat, lay the Monterey Jack in a sheet over the meat and peppers and cover the pan for a minute so it melts into the filling rather than onto the plate.
- While the cheese is going soft, warm the low-carb tortilla in a dry pan for thirty seconds a side so it will fold instead of splitting.
- Heap the cheesy beef along the lower third of the warm tortilla, fold both ends over it and roll it into a tight parcel with the seam underneath.
- Wipe the pan out, add the last of the olive oil and press the parcel seam-side down for two minutes, then turn it and give the other face the same, until it is crisp enough to hold itself shut.
- Cut it across the middle and stand the two halves upright so the cheese stays where it is.
