  • 4 Tomato
  • ½ Onion
  • 1 Serrano chilies
  • 4 tbsp Cilantro
  • 1 Lime
  • ½ tsp Salt

Method

  1. Halve the tomatoes, scoop out and discard the watery seeds and core, then finely dice the flesh (leave it in a sieve to drain while you work so the salsa doesn't go watery). Finely dice the onion and serrano and chop the cilantro.
  2. Juice the lime. Toss the diced vegetables and cilantro with the lime juice and salt.
  3. Let the pico rest 5-10 minutes so the salt draws out the juices and the flavors marry, then taste and adjust salt and lime.
  4. Serve with chips or tacos.
