Pizza Diavola
Spicy salami pizza with chilli and mozzarella.

Ingredients
- 400 g Pizza dough
- 200 g San Marzano tomatoes (DOP)
- 150 g Fresh mozzarella
- 60 g 'Nduja
- 1 tsp Salt
- ½ tsp Red pepper flakes (optional)
- 2 tbsp Extra-virgin olive oil (optional)
Method
- Heat the oven as hot as it goes with a tray inside, at least 250C (480F).
- Crush the tomatoes in a bowl with the salt and a little of the oil into a rough sauce.
- Stretch the dough thin on a floured surface into a round.
- Top the base with the sauce, the mozzarella, and dabs of 'nduja.
- Slide onto the hot tray and bake until the crust chars and the cheese bubbles.
- Finish with chilli flakes and serve.
