- 70 g Jasmine rice
- 180 g White fish fillet
- 120 g Zucchini
- 15 g Ginger
- 60 g Carrot (optional)
- 1 tsp Fish sauce (optional)
- ½ Lime (optional)
- 10 g Cilantro (optional)
Method
- Rinse the jasmine rice until the water runs clear, then cook it in one and a quarter times its volume of water, covered, until the water is absorbed, about 14 minutes.
- While the rice cooks: cut the ginger into fine matchsticks, the carrot into thin coins and the courgette into thick half-moons. Chop the coriander.
- Spread the carrot and courgette on a heatproof plate, scatter over half the ginger and set it above an inch of simmering water. Cover and steam 5 minutes, until the carrot begins to give.
- Lay the fish on the vegetables with the rest of the ginger, cover again and steam 8 minutes more, until the fish is opaque through and flakes at a gentle push.
- Off the heat, spoon the fish sauce and a squeeze of lime over the fish and let it sit for a moment to take the seasoning.
- Fluff the jasmine rice into a bowl and lift the fish and vegetables alongside with all the ginger steaming juices poured over. Scatter the coriander.
