Pollo al Ajillo
Chicken in garlic & white wine

Ingredients
- 800 g Chicken thighs
- 12 cloves Garlic
- 150 ml White wine
- 60 ml Extra-virgin olive oil
- 1 tsp Salt
- ½ tsp Black pepper
- 2 Bay leaves (optional)
- 3 tbsp Parsley (optional)
Method
- Pat the chicken dry and season well with salt and pepper.
- Smash the garlic cloves with the side of a knife and remove the skins.
- Chop the parsley.
- Heat the olive oil over medium-high. Toast the garlic until golden, then scoop it out.
- Brown the chicken in the same oil, skin-side first, until deeply golden on both sides.
- Return the garlic to the pan. Add the bay leaves and pour in the wine, scraping up the browned bits.
- Lower the heat. Simmer covered until the chicken is cooked through and saucy.
- Shower with the parsley. Serve with bread for the garlicky oil.
