Chicken stewed with peppers & tomatoes

Ingredients
- 8 Chicken thighs
- 2 Bell pepper
- 1 Onion
- 3 cloves Garlic
- 80 g Jamon serrano
- 400 g Canned tomatoes
- 120 ml White wine
- 1 tsp Pimenton dulce (sweet smoked paprika)
- 3 tbsp Extra-virgin olive oil
- 1 tsp Salt
- ½ tsp Black pepper
Method
- Season the chicken thighs all over with salt and pepper.
- Slice the peppers, onion, garlic, and ham.
- Brown the chicken in the olive oil until golden on both sides, then set it aside.
- Soften the peppers, onion, garlic, and ham in the same pan, then stir in the paprika.
- Add the wine and tomatoes, return the chicken, and simmer covered until tender, about 25 minutes.
- Rest off the heat, then serve.
