  • 250 g Button mushrooms
  • 1 Onion
  • 3 cloves Garlic
  • 200 ml Fino sherry
  • 3 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 3 tbsp Parsley (optional)

Method

  1. Season the chicken; slice the onion, garlic, and mushrooms.
  2. Brown the chicken in the oil in a wide pan until golden on both sides, then set it aside.
  3. In the same pan, soften the onion, garlic, and mushrooms until the onion is translucent and the mushrooms release their liquid.
  4. Pour in the sherry, return the chicken, and braise gently until the chicken is tender and the sauce has reduced, about 20 minutes.
  5. Scatter the parsley over and serve.
