  • 600 g Chicken thighs
  • 3 Lime
  • 4 cloves Garlic
  • 2 Guajillo chilies
  • 1 tsp Ground cumin
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 4 tbsp Cilantro (optional)
  • 1 Onion (optional)

Method

  1. Toast the guajillo chilies in a dry skillet until fragrant, 30 seconds a side, then soak in hot water until soft, 10 minutes.
  2. Grate the garlic, zest and juice the limes, and stir with the cumin, oil, and salt in a wide bowl.
  3. Drain the softened chilies and mash to a paste, then stir into the marinade.
  4. Turn the chicken through the marinade to coat and leave to sit while the pan heats.
  5. Slice the onion into rings.
  6. Sear the chicken over high heat, turning once, until deeply charred and cooked through, about 5 minutes a side.
  7. Rest 3 minutes, then slice and pile onto the onion with the cilantro torn over.
