  • 700 g Chicken thighs
  • 2 Bell pepper
  • 250 g Mushroom
  • 400 g Canned tomatoes
  • 1 Onion
  • 3 cloves Garlic
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Dried oregano
  • ½ tsp Salt
  • 3 tbsp Parsley (optional)

Method

  1. Slice the peppers, onion, and mushrooms; mince the garlic.
  2. Brown the chicken thighs skin-side down in the oil until deeply golden, then lift out.
  3. Soften the peppers, onion, mushrooms, and garlic in the same pan until collapsed.
  4. Add the tomatoes, oregano, and salt, return the chicken, cover, and simmer until tender, 25 minutes.
  5. Scatter parsley over and serve.
