- 700 g Chicken thighs
- 2 Bell pepper
- 250 g Mushroom
- 400 g Canned tomatoes
- 1 Onion
- 3 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- 1 tsp Dried oregano
- ½ tsp Salt
- 3 tbsp Parsley (optional)
Method
- Slice the peppers, onion, and mushrooms; mince the garlic.
- Brown the chicken thighs skin-side down in the oil until deeply golden, then lift out.
- Soften the peppers, onion, mushrooms, and garlic in the same pan until collapsed.
- Add the tomatoes, oregano, and salt, return the chicken, cover, and simmer until tender, 25 minutes.
- Scatter parsley over and serve.
