About Pollo al Marsala

Pollo al Marsala is the chicken version of a Sicilian-Italian-American classic built around Marsala, the fortified wine from western Sicily whose sweet, caramelized depth is the whole point of the dish. Thin chicken cutlets are dusted in flour and seared until golden, then finished in a pan sauce of mushrooms and reduced wine that turns glossy and rich. The flour dredge does double duty here — it gives the chicken a light crust and helps the sauce thicken as it reduces.

This is fast food in the best sense: flattening the breasts to an even thickness means they cook through in minutes, and the whole dish lands in about half an hour. The browned mushrooms lend earthiness while a finishing knob of butter pulls the reduction together into something silky and restaurant-glossy. It's naturally lean and high in protein, which is why it reads as a lighter weeknight main despite feeling indulgent. Serve it with the sauce spooned generously over, alongside mashed potato, buttered pasta, or a simple vegetable to catch the drips.
