Ingredients

  • 500 g Chicken breast
  • 100 g Pumpkin seeds (pepitas)
  • 6 Tomatillos
  • 30 g Cilantro
  • 3 cloves Garlic
  • 1 Green chili
  • ½ tsp Ground cumin
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt

Method

  1. Poach the chicken in gently simmering water until just cooked, about 15 minutes, then lift out (keep the liquid).
  2. Toast the pumpkin seeds in a dry pan over medium heat, stirring, until they puff and pop, then set a spoonful aside for garnish.
  3. Blitz the toasted seeds with the tomatillos, cilantro, garlic, chili, and cumin, loosening with a ladle of the poaching liquid, to a smooth green sauce.
  4. Warm the oil, pour in the sauce, and cook gently, stirring, until it thickens and deepens — don't let it boil hard or it splits.
  5. Slice the chicken, return it to the sauce to warm through, and serve scattered with the reserved seeds.
