  • 200 g Konjac rice
  • 200 g Chicken thighs
  • 70 g Avocado
  • 2 tbsp Olive oil
  • ¼ Lime
  • 30 g Poblano peppers (optional)
  • 40 g Queso fresco (optional)
  • ½ tsp Ground cumin (optional)
  • 10 g Cilantro (optional)

Method

  1. Cut the chicken thighs into large pieces and rub them with the cumin and salt. Slice the poblano into strips, slice the avocado, and chop the coriander.
  2. Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
  3. Heat the olive oil in a heavy pan over high and cook the poblano strips for 3 minutes until they blister and blacken in places. Push them to one side.
  4. Lay the chicken into the hot oil and cook 8 minutes, turning once, until deeply browned and cooked through. Squeeze the lime over off the heat.
  5. Spread the konjac rice on a plate and pile the chicken and blistered poblano over it with the pan oil. Add the avocado, crumble the queso fresco over and finish with coriander.
