- 1 Low-carb tortillas
- 170 g Chicken thighs
- 50 g Cheddar cheese
- 80 g Avocado
- 1 tbsp Olive oil
- 10 g Chipotles in adobo (optional)
- ½ Lime (optional)
- 10 g Cilantro (optional)
Method
- Cut the chicken into small pieces and toss with the chopped chipotle and salt. Grate the cheese, slice the avocado and chop the coriander.
- Heat half the olive oil in a pan over medium-high and cook the chicken for 7 minutes, turning once, until browned and cooked through. Tip it onto a plate.
- Scatter the cheese over one half of the wrap, spread the chicken over it and fold the wrap closed into a half-moon.
- Wipe the pan, add the rest of the oil and griddle the folded quesadilla over medium heat for 3 minutes a side, pressing it flat, until the outside is crisp and the cheese has melted into the chicken.
- Cut into wedges and serve at once with the avocado, coriander and a squeeze of lime — the cheese stops binding as soon as it cools.
