Ingredients

  • 600 g Pork loin
  • 2 Apple (tart)
  • 1 Onion
  • 6 Sage
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 1 tsp Dijon mustard (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Slice the pork into thick medallions and season with salt and pepper; slice the apples and onion.
  2. Sear the pork in the oil until golden on both sides and just cooked, then lift out.
  3. Soften the onion and apple in the pan with the sage until golden at the edges.
  4. Stir the mustard into the pan with a splash of water, return the pork to warm, and serve.
