- 600 g Pork loin
- 2 Apple (tart)
- 1 Onion
- 6 Sage
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 1 tsp Dijon mustard (optional)
- ½ tsp Black pepper (optional)
Method
- Slice the pork into thick medallions and season with salt and pepper; slice the apples and onion.
- Sear the pork in the oil until golden on both sides and just cooked, then lift out.
- Soften the onion and apple in the pan with the sage until golden at the edges.
- Stir the mustard into the pan with a splash of water, return the pork to warm, and serve.
